Gluten Free Vanilla Pudding Chocolate Chip Cookies

Ingredients
  

  • 2 1/4 cups gluten free all-purpose flour
  • 1 teaspoon xantham gum
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cups butter softened
  • 3/4 cups packed brown sugar
  • 1/4 cup white sugar
  • 1 3.4 ounce packages instant vanilla pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a mixing bowl, cream butter and sugars. Mix well.
  • Add pudding mix, eggs and vanilla into mixture.
  • In another bowl combine flour, xantham gum, salt and baking soda; add to creamed mixture and mix well.
  • Fold chocolate chips in to mixture.
  • Drop by teaspoonfuls onto ungreased baking sheets.
  • Bake for 10 to 12 minutes or until lightly browned.
