Gluten-Free Double Chocolate Chip Cookies

Fluffy and delicious gluten-free cookies!

Ingredients
  

  • 1 cup of butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups Pastry Flour I use GF Sun Flour Mills
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 1 cup milk chocolate chips or semi-sweet
  • 1 cup white chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • In large bowl cream together butter,brown sugar, sugar.
  • Add 3 eggs and vanilla extract to butter and sugars.
  • Sift xanthan gum, pastry flour, baking soda, baking powder, and salt together and then add to mixture.
  • Add chocolate chips and mix well.
  • Tbs size round balls on pan 2 inch. apart
  • Bake for 12-14 minutes or until golden brown.
