If you have been to Red Lobster and experienced the deliciousness of their cheddar biscuit then you know why I would want to make a copycat recipe! For those of you who have not had the most delicious biscuit known to man, just take my word for it, they are to die for! For my Gluten Free people out there I do not want you to miss out either. Do not fret because I have the recipe for you! My husband, who has Celiac, can eat almost a whole batch himself. He really missed those biscuits when first diagnosed so he gets his fill when I make them!
Ingredients for biscuit mix:
2 ½ cups Gluten Free baking mix
1 cup cold milk (I use Rice Milk)
4 tablespoons cold butter (1/2 stick) (earth balance buttery spread)
¼ teaspoon garlic powder
2 cups grated cheddar cheese
Brush on Ingredients:
2 tablespoons butter, melted
½ teaspoon dried parsley flakes
½ teaspoon garlic powder
¼ teaspoon salt
Directions:
1. Preheat your oven to 400 degrees.
2. Combine and mix gf baking mix with cold butter in a bowl. Add cheddar cheese, milk and garlic. Mix by hand.
3. Drop ¼-cup portions of the dough onto sheet pan lined with parchment paper. Optional, grease paper with a little olive oil.
4. Bake for 10 minutes. Remove from oven and add brush on ingredients. Bake for 5 minutes or until tops are light golden brown.
Makes 8 biscuits if you make them exactly ¼-cup portions.
These are great served with seafood or Italian meals.
